During one of my classes, I made a cordial with orange peel for the bitter taste which aids in digestion especially helpful after a large meal. The cinnamon and thyme are both carminitives which help relieve gas. The orange, thyme, and cinnamon are a good balance of flavors and are a bit warming. This is the perfect cordial to make for the fall.

Try a shot glass full after a large meal, or a hard day. 🙂 The honey helps reduce the craving for dessert.

Orange Thyme Cordial

Zest from 3-5 medium sized oranges
2 Cinnamon sticks, broken
2 sprigs Thyme (Thymus vulgaris)

Zest the oranges, then add orange zest, cinnamon sticks, and thyme to a pint sized canning jar. Cover with Brandy. Shake the cordial every day for a week, then let it sit for 6 weeks. After infusing, strain and add honey to taste. Enjoy!
